How to Freeze Garlic
Use a food processor of manual chopper the chop the cloves quite small. Place in a small ziplock bag and press flat as though it was fruit leather — the bag of garlic should be less than half an inch thick. Freeze it flat. To use, open the bag and snap off a piece.
Dehydrate Garlic Scapes
Wash scapes and remove excess water. Remove the tops and cut the remaining stems into 1 inch pieces.
Coarsly chop them in food processor — do not overdo it.
Use electric dehydrator or lay them out on a fine screen in an oven on low. They are dry when brittle but still bright green.
I store mine in a glass jar in a cool, dark pantry and I don't crumble them until I use them.
To use — treat them like any dried herb. They will add a subtle garlic flavour.Print Recipe
